Our Organic Ceremonial Matcha is of Japanese origin, specifically from the Kagoshima prefecture, one of the best producers of green tea.
To make this matcha, plants of the Okumidori cultivar were used. The wonderful bright green powder gives an idea of its superior quality; the noble sweet and sour notes give a fine umami character, offering a surprising subtle sweetness.
Matcha is a green tea that undergoes several different processes during its cultivation. The bushes are kept under shade before harvest, which allows their chlorophyll and antioxidant levels to increase.
This ceremonial matcha is kept for 3 weeks under shade and harvested in the spring; this classifies it as a first flush, meaning the first harvest. First flush green teas are distinguished by subtle, sweet, floral and high quality flavours.
Preparation:
1 teaspoon of matcha in 6 ounces of hot water (75 to 80 degrees C)
Mix until completely dissolved and forms a foam on top of the drink.
